Pistachios

For many centuries, the pistachio has been promoted as an exotic fruit in the Middle East, but nothing is known about its exact origin. They were just there, were traded and gradually found their way in countries along the Mediterranean. Today we find them in Afghanistan, Iran, Turkey, Syria, Greece, Italy and the U.S.A. In our market area. We mostly specialize in American and Iranian pistachios. In California , growers have gained ample experience with harvesting, which applied when harvesting the pistachio. In Afghanistan, but also in other countries, long sticks are used to lightly hit the branches of the pistachio trees and knock ripe nuts onto the ground. 

The Iranian and American pistachios in shell are slightly different in appearance, the Americans being slightly smoother and lighter in color: light creamy, which gives the end product a nice and clean appearance. 

This is partly due to the fast and efficient American method of processing. The Iranian product is greener, caused by sun drying. 

Eating pistachios plain is arfuably the most common way they are enjoyed, either raw or roasted. The pistachio has become an important product.
